The main purpose of this work is to highlight the professional experience related to the cultivation of the 'Quebranta' grape variety (Vitis vinifera L.) on a 5-hectare family property located in the Mala Valley, Lima. This area is located 100 m.a.s.l. on the left bank of the Mala River, in the district of Mala, province of Cañete, department of Lima. The professional performance ranges from the project analysis phase to the post-harvest processing stage of the 'Quebranta' grape. The 'Quebranta' variety was chosen and free-standing plants were chosen, which were rooted in bags. The installation of the vineyard was carried out in several stages, and driving systems adapted to the characteristics of each point in the field were implemented. A fertilization and fertilization program adjusted to the age of the plants was established, in addition to a phytosanitary control plan. Cultural work was planned, including pruning, weed control and irrigation. The evaluation of the maturation indices guided the harvest programming. The logistics for harvesting and transporting the grapes to the winery were managed, where weighing, destemming, maceration and preparation of the must were carried out. This project highlights the importance of “terroir“ in viticulture and highlights the need to carefully consider each stage of the process to guarantee the production of high quality grapes intended for the production of pisco, taking into account the specific conditions of the Valley of Bad in Lima, Peru.
