The overall purpose of this study was to chemically characterize the dry salted alpaca skin processed to pelambre for edible purposes. Also, to compare the nutritional components between regions of the body in two levels of process. As well as, to get their performance and microbiological isolation (Clostridium sp and Salmonella sp) which in turn obtains carnaza. Furthermore, the research was carried out in the tannery workshop of the Faculty of Zootechnics of the Universidad Nacional Agraria la Molina; taking approximately five months. Further, twenty adult Huacaya alpaca skins from the Region of Junin were used in six different treatments: dry salty skin croup (T1), dry salty skin collar (T2), dry salty skin skirt (T3), apelambrada skin croup (T4), apelambrada skin collar (T5) and apelambrada skin skirt (6); considering twenty skin samples per treatment. As for the statistical method, an analysis of variance (ANVA) was conducted with a significance level of (α = 0.05) using a Completely Random Design (DCA) with a 2 x 3 factorial arrangement (two levels of process and three regions of the body). The results show that the skirt region and the pelambre process present the highest percentage of humidity. As for the total protein, results also show difference (P <0.05) between treatments, being the process on the neck and the pelambre the ones with the highest value. And Regards to ether extract, the brisket and dry salty croup showed the highest values. Moreover, there were significant differences (P <0.05) in nitrogen and ash-free extract resulting in the highest percentage the dry salty skin of the skirt. Additionally, skins apelambradas obtained higher percentages of calcium; however, dry salty skins show higher values for sulfur and sodium. Finally, Clostridium sp was isolated from dry salty alpaca skins and pelambre. Keywords: alpaca, pelambre, carnaza
