The aim of the study was to evaluate the inclusion of endosperm of tara seeds (EST) and powder of Agave americana leaves (HAA) on the functional and physiological properties and as well as the apparent absorption of minerals as compared with alpha cellulose (CEL). Solubility (SA), water absorption and retention capacities (CAA and CRA), swelling (CH) and fat adsorption (CAAC) capacities were determined in In vitro studies. The effects related to the regulation of body weight, intestinal transit and Ca and P apparent absorption were determined in In Vivo studies using Holtzman rats. The experimental diets contained 6 and 10 percent of each source of dietary fiber and 6 percent of CEL. The results showed that EST had 32,18 percent of SA, 44,99 g/g of CAA, 47,86 g/g of CRA, 45,99 ml/g of CH; and the HAA had 6,38 g/g CAAC, values significantly higher than CEL (p <0.050). Diets with 6 and 10 percent of EST decreased feed intake, body weight gain, apparent fat digestibility and faeces pH, results significantly different than CEL (p <0.050). Diets with 6 and 10 percent HAA showed increased moisture, mass and volume of the faeces and it were significantly different than those observed in the control diet (p <0.050). The apparent absorption of Ca and P was not influenced by the dietary treatments (p> 0.050). In conclusion, EST has high hydration capacity and affects body weight gain in Holtzman rats while HAA has a high capacity for fat adsorption and with influences intestinal transit time; however, the two sources of dietary fiber showed no effects on the apparent absorption of Ca and P.
