Obesity is a chronic inflammatory disease that increases oxidative stress, with the risk of developing cardiovascular diseases among others, to reduce the damage is suggested to increase the consumption of functional foods, which have bioactive compounds that exert a protective effect against oxidative stress. Potatoes have bioactive compounds and their content differs between varieties and part of the tuber, with a greater concentration in the husk than in the pulp. The objective was to determine the effect of the inclusion of peel or pulp of two potato varieties, Yungay and Canchán in the accumulation of adipose tissue and oxidative stress in obese rats. Twenty-Four Holtzman obese male rats were used, divided into four groups of six animals each, fed for 28 days with diets containing 10% pulp or skin of the two varieties. At the end of the feeding period, all the animals were sacrificed. Visceral and abdominal fat weights were recorded; blood samples were taken to determine glucose, HDL and triglycerides; also, measurements of thoracic and abdominal circumference were made. Liver samples were also taken to measure the antioxidant status by superoxide dismutase and catalase activities. The data were subjected to ANOVA under a Completely Randomized Design with a 2x2 factorial arrangement and the comparison of means through Fisher's test using the statistical program MINITAB. The dietary treatments did not affect the weights of the visceral and abdominal fat tissue. The Yungay variety had a highly significant effect (P <0.01) on the enzymatic activity of catalase and showed significant interaction (P <0.05) for the diet with Yungay meat. In addition, the superoxide dismutase variable shows a highly significant interaction (P <0.01) between variety and part of potato, being higher in the diet with Yungay variety pulp.
