The fruits of the Capsicum genus have a great diversity, in forms, colors and content of metabolites; being these compounds of industrial interest, so they should be characterized for their application. Peru has been a center of diversification of Capsicum and possibly the country with the greatest diversity of cultivated peppers in the world. This work studied 100 accessions of four species of Capsicum (C. annuum, C. baccatum, C. frutescens and C. chinense), capsaicinoids (nordihydrocapsaicin, capsaicin and dihydrocapsaicin) and pungency was quantified; the total phenolic compounds; the antioxidant activity, by means of the inhibition of the radical cation ABTS+ •; and the instrumental color (C *, h * and color index in CIELab). The attributes measured were related with Principal Component Analysis (PCA) and Discriminant Analysis (DA). In general, diversity was found in the attributes; however high correlations were found between the contents of capsaicinoids with total phenolic compounds and antioxidant activity; thus also a high inverse correlation between the hue value and the color index. The maximum pungency reached was 365 929 units Scoville for the pepper Pucunucho de Lamas (C. Chinense). In general, the fruits of Capsicum evaluated presented attractive properties and can be used as an alternative botanical source for the extraction of oleoresins, dyes, flavorings, pharmaceutical products, among others.
