The Nostoc sphaericum V., an algae species of the Peruvian Andes, has not yet been industrialized as a renewable resource. Deposited in numerous lakes, springs, and various aquatic environments, its long-standing consumption indicates its security as an economic nutritional food complement. The objective of the research was to obtain and characterize the rheological behavior of the hydrocolloid of the Nostoc sphaericum V. in solution at different concentrations and temperatures. The population used in the study were the algae in the Lagoon of Patococha located in the district of Catac, province of Recuay, department of Ancash, 54 kilograms of non-probabilistic sample were captured, selecting those with larger diameters greater than 1,5 centimeters. The samples were placed in a convection dryer at 60oC, with an air speed 3m/s at a relative humidity of 35%. From the milled samples, we isolated the hydrocolloid by heat extraction at 90°C with 30 parts of water and a dried seaweed. The extract was discolored with 0,15 g an extract of active carbon /70 mL after 30 minutes of agitation and at a temperature of 28 °C for six hours. The hydrocolloids were precipitated with ethyl alcohol in the proportions of two volumes of alcohol to one of extract in order to be freeze-dried at a temperature of -40 °C for 24 hours at a pressure of sublimation of 0,004 atm. From the hydrocolloid of the Nostoc sphaericum V. dilutions of 0,2; 0,6; 1,0; 1,2; 1,3; 1,4; 1,5; 1,6; 1,7; 1,8; 1,9, and 2,0% (p/p) hydrocolloid in water were prepared. The rheological measures were performed using a viscometer Brookfield DV-III; the temperatures in the rheologic tests were 6±0,5°C, 10±0,5°C, 15±0,5°C , 20±0,5°C , 25±0,5°C, 30±0,5°C, 35±0,5°C, 40±0,5°C, 50±0,5°C, 60±0,5°C y 70±0,5°C. Of the five models tested, Oswalt, Bingahn, Casson, Casson-Modified and Herschel-Bulkely, the models of Ostwald and Herschel-Bulkely are those that fit the data obtained in the present research work. When increasing the temperature from 6°C to 27 °C in the concentration of 0,2% of the hydrocolloid, the index of rheologic behavior (n) increased from 1,146 to 1,230, while the consistency index (k) decreased from 0,037 Pa ns to 0,024 Pa sn, behaving as a dilatant fluid. When increasing the temperature from 35°C to 60°C at a concentration of 2% of the hydrocolloid, the index of rheologic behavior (n) increased from 0,165 to 0,960 while the consistency index (k) decreased from 63,655 Pa sn to 0,424 Pa sn, behaving as a pseudo plastic fluid. The effect of the concentration of the hydrocolloid (X) on the consistency index (k) at 27°C temperature obeys the exponential equation k=0,0025e3,8026X , while at 70°C temperature it obeys the exponential equation k=0,0005e3,3541X. When increasing the concentration of the hydrocolloid from 0,2% to 2% and raising the temperature from 6°C to 70°C, the energy of activation is indicated by a movement of molecules that increase from 443,937 J/mol to 2083,235 J/mol.
