The high volume of product that can no longer be marketed in stores due to having an unacceptable degree of maturity (GM) (GM>4) or as a result of storage under ethylene parameters and inappropriate temperatures causes a 36% loss on the shelf. which is an important problem for a supermarket dedicated to the ripening and sale of bananas, due to the economic loss and the costs that their disposal entails. In order to reduce and find a better treatment, the following objectives were formulated: a) Evaluate the quality of the banana after transportation, b) Evaluate the influence of three storage conditions, treatment 1: 22 ± 1°C and 200 ppm treatment 2: 21 ± 1 °C with 150 ppm ethylene, treatment 3: preconditioning: 15 hours at 19 ± 1 °C with storage at 20 ± 1 °C and 80 ppm ethylene on grade evaluation banana maturity at 48 hours of storage; c) Verify the degree of commercial maturity (GM 4 to 4.5) in the store and need the batch at 72 hours for the 3 treatments described; d) Determine the loss under storage conditions for treatments 1, 2 and 3. The results obtained after treatment showed that in treatment 1, the GM varies from 4.5 to 5 with a percentage of loss of 100%; treatment 2 the GM varies from 4 to 4.5 with a percentage of loss of 79.63%; while treatment 3, the GM varies from 3 to 3.5 with a percentage of loss 0%.
