The ability hydrophilic antioxidant, the phenolic content of anthocyanin and carotenoid mashua of 84 cultivars from Cusco. The results indicate that mashua cultivars have a wide and considerably hydrophilic antioxidant capacity as measured by three different test methods: ABTS, FRAP and ORAC (20.6 - 128.2; 22.7 - 173.2 and 35.1 - 158.8 μmol TE / g (bs) respectively) . In some cultivars these values were higher than those reported in fruits and vegetables with high antioxidant capacity recognized. We found a good correlation between the antioxidant capacity measured by ABTS and FRAP methods (r2 = 0.834) between the methods being moderate ABTS and ORAC, FRAP and ORAC (r2 = 0.605 and 0.500, respectively). The phenolic content ranged between 5.5 and 16.7 mg AGE / g (bs), anthocyanins from 0.09 to 2.68 mg CGE / g bs (only detected in 17 cultivars) and carotenoids between 0.48 and 15.09 mg β-caroteno/100g (bs). Cultivars with highlighted in purple coloration anthocyanins and phenolic compounds and the yellow coloration in carotenoid content. Among the phenolic compounds showed moderate and good correlation with the different capacities antioxidants (r2 = 0.44 - 0.75) being low to moderate correlation between antioxidant capacity and anthocyanins (r2 = 0.42 - 0.67). This would indicate that the phenolic antioxidant capacity contribute to significantly tuber. The results of this study indicate that the region of Cusco, Its mashua cultivars are important features in content of phenolic compounds, anthocyanins, carotenoids and antioxidant properties. These cultivars represent a natural source of antioxidant phytochemicals.
