The present work is part of an ongoing project of a transnational company leader in the food industry. The project is aimed at a crackers brand produced in Peru that is marketed in 22 countries, and its implementation depends on the results obtained in the tests at the Lima plant. To carry out the tests, reference has been made to what has been implemented in other countries that also have cracker production lines. Changes were made at the formulation and process levels, which basically consist of replacing the use of enzymes (amylases and proteases) with sodium metabisulfite as a mass improving agent and thereby reducing the resting time of the dough from 4 hours to 1,5 hours The obtained results indicated that the quality parameters were met, an acceptable result of the sensorial evaluation was obtained (quantitative descriptive analysis) and it was possible to reach the life time with which the product currently counts. These results confirmed that project implementation is viable and will lead to an improvement in plant processes and a gross margin increase of approximately five percent.
