Abstract: La leche es uno de los alimentos más importantes a nivel mundial al proporcionar nutrientes esenciales y ser una fuente importante de energía alimentaria y proteínas de alta calidad. Sin embargo, dada su compleja composición, su industrialización requiere un estudio específico de las características que esta materia prima debe tener para definir su aptitud tecnológica. Así, las empresas son fuertemente dependientes de su calidad para producir los mejores productos. Esta calidad cambiante no es fácilmente predecible; sin embargo, conocerla y entenderla resulta prioritario para definir su uso ya que esto afecta la estabilidad térmica de la leche. La estabilidad térmica de la leche es una característica vital para su industrialización, de modo que, en el control de calidad, la empresa objeto del estudio realiza exhaustivos análisis a la materia prima, incluyendo la prueba de capilaridad donde colocan leche en un capilar y someterla a 140 °C por cinco minutos para evaluar su resistencia térmica. Sin embargo, los resultados de este método tienen algunas desventajas pues al ser visuales son subjetivos, dependiendo de la agudeza visual del analista y de su experiencia para ver la coagulación de la leche. Es así que este trabajo buscó una alternativa para seleccionar la leche para procesos UHT de modo que no sea indispensable, a futuro, la prueba de capilaridad para determinar la aptitud tecnológica de la leche. Para ello, se elaboró un perfil analítico definido por la recolección y análisis de datos de grasa, sólidos no grasos, grados brix, pH y acidez de muestras de leche concentrada por evaporación de la cuenca de Majes – Arequipa correspondientes al periodo Junio 2016 a Agosto 2017 de una empresa peruana dedicada a la industria láctea en contraste con los resultados de capilaridad.
Milk is one of the most important foods over the world which provides essential nutrients and is an important energy and protein source. Nevertheless, due to its complex composition, its industrialization needs a specific research about requirements this raw material must have to define its technological aptitude. That’s why different companies strongly depends of this milk’s quality to produce the best dairy products. This changing quality is not easily predictable, but knowing and understand it is truly important to define its use because it affects its thermal stability. Milk’s thermal stability is a vital characteristic to it industrialization so, as a quality control, company object of study makes complete analysis to the milk, which includes the capillarity test, that consist in filling a capilar with milk and submit it to 140 °C by 5 minutes to evaluate its thermal resistance. However, this results have some disadvantages for being visual and subjectives due to the fact they depends on the analyst’s visual acuity and its experience to see the milk coagulation. In this context, this investigation looked for an alternative to select cow milk to UHT process to avoid capillary test as an indispensable analysis in future, to determinate the milk technological aptitude. To achieve it, this assignment made an analytical profile defined by collecting and analysing fat, non fats solids, Brix degrees, pH and acidity data of concentrated milk by evaporation from Majes - Arequipa since the period of June 2016 to August 2017 of a dairy perivian company and compare them by contrast with capillary test.
