Egg is one of the most complete foods that stands out for its nutritional value, low cost, accessibility and excellent techno-functional properties. Due to its composition complexity and particular characteristics, each egg fraction could be used in different applications in food industry, depending on their physical, chemical and organoleptic characteristics. Ovoproducts can be found in differents presentations: powder, liquid, frozen, salted and sugared, which provide technological solutions for each customer. For those reasons, ovoproducts have an excellent international potential since Peru has good weather conditions and it is free from avian influenza and Newcasttle disease, which ensure food safety. The present work analyzed ovoproducts exports during the last six years detailing the applications and techno-functional properties expected for each ovoproduct category in each country of destination. At the end of this study, it concluded that exported ovoproducts were used due to its whipping capacity, gelification properties, emulsification, coagulation, binding, water holding capacity, color, etc. However, there are plenty of applications that have not been developed and therefore there is a big challenge to take advantage of each techno-functional property.
