Washington state is the leading producer of apples in the United States (US). The increasing association of foodborne outbreaks and recalls of fresh apples caused by cross-contamination between food contact surfaces of equipment used for packing and fresh apples, have emphasized the focus on food safety interventions within the apple packing industry. Indicator organisms are used for hygiene monitoring of surfaces, through the validation of cleaning and disinfection procedures. However, there are currently no standards that define microbiological limits for an acceptable level of indicator organisms on food contact surfaces. Therefore, the objectives of this research were to determine the average population and microbiological limits of indicator organisms such as aerobic plate count, Enterobacteriaceae, coliforms and Escherichia Coli on food contact surfaces after cleaning and sanitation procedures in five commercial apple packing facilities located in Washington State, US. In addition, to assess those microbial counts throughout each unit operation of the packing process and by type of surface. Overall, 741 surfaces belonging to all unit operations were sampled during awhole packing season (september 2018 – july 2019). Microbiological analysis was performed using 3MTM Petrifilm plates. Ranges of microbial counts (Log CFU/100 cm2 ) were established for each indicator organism throughout each unit operation of the apple packing process. In regard to aerobic plate counts, the waxing and second tunnel drying unit-operations showed significantly higher values than the washing operation. Higher Enterobacteriaceae and coliforms populations were obtained in the washing and sanitation unit operations. E. coli counts were low throughout all unit operations and no statistically significant differences were found between them.
