The aim of the research was to evaluate the effect of adding tomato lycopene extract on the shelf-life of flaxseed oil and on its physicochemical characteristics and antioxidant properties. Flaxseed oil was extracted by cold press with expeller obtaining a yield of 33.38 ± 0.98 percent (w/w). The lycopene extract of tomato was extracted with supercritical CO2, and 219.95 ± 1.76 μg of lycopene/g of tomato was quantified by HPLC. The oxidative stability index (OSI) at 110 °C, measured by Rancimat equipment, of three lycopene concentrations (40, 80 and 120 ppm) in flaxseed oil was compared to a negative control (flaxseed oil) and a positive control (flaxseed oil with 200 ppm BHT). The concentration of 80 ppm of lycopene in flaxseed oil showed no significant difference (p > 0.05) with the positive control according to the Duncan test, therefore this concentration was used for the following tests. Flaxseed and flaxseed with lycopene (80 ppm) oils were characterized using the following analyses: moisture, refractive index, color, free fatty acids, peroxide value, pAnisidine value, k232 and k268. The hydrophilic, lipophilic and total antioxidant capacity, total polyphenols, tocopherols, fatty acid composition were determined in both oils. The shelflife of both oils was predicted by extrapolation at 25 °C by the Rancimat method using temperatures of 90, 100 and 110 °C, and by accelerated tests in oven at temperatures of 40, 50 and 60 °C. The result was an increase of 31.08 and 32.48 percent in the shelf-life of flaxseed oil when adding 80 ppm of lycopene based on the Rancimat method and the accelerated tests in oven, respectively.
