In this research the purification of fructooligosaccharides (FOS) yacon, using activated carbon and different cation exchange resins was studied. Experiments were performed by low pressure chromatography, used jacketed glass column (16 cm length x 1.2 cm internal diameter and 2.8 cm outside diameter). With activated carbon columns, purification at two temperatures (25 and 40 °C) of the extract previously clarified was evaluated, the best results were obtained at 25 °C achieving increase the purity of the clarified extract of 50.6 up to 92.1 percent with a recovery of FOS 75.1 percent. In the study of purification with cation exchange resins of the extract previously clarified and demineralized, the influence of the temperature (25 and 60 °C) and type of cationic resin was evaluated (Diaion UBK535L Ca, Diaion UBK555 Ca, Diaion UBK530 Na, Dowex 99 Ca/320, Purolite PCR642 Ca, Purolite PCR642 K). Through a multivariate ANOVA it was determined that the interaction of these two factors has a significant effect on the purification of FOS. Best results were obtained at 60 °C and with the resin Diaion UBK530 Na. Was achieved increase the purity of the clarified extract and demineralised of 54.5 up to 88.2 percent, with a recovery of 99.4 percent. This research shows that the columns packed with activated carbon or cation exchange resins are a good alternative for obtaining high purity FOS, scaling studies being necessary for the application of these technologies at industrial level.
