In the food industry, cleaning and disinfection processes are of vital importance as it seeks to obtain safe food for consumers, it is these two operations that help meet this objective. To carry out these processes it is important to know the production line, the nature of the food, the detergent, and the disinfectant; to find an efficient, economical, and safe cleaning and disinfection method. Proposing cleaning and disinfection protocols in different food production lines were carried out under the charge of a sales professional in a company dedicated to the sale of cleaning and disinfection chemicals for the food industry. The present work shows the validation of the best cleaning and disinfection procedure for a line of potato flakes, where a caracara interview was carried out to obtain information on their current cleaning and disinfection processes, which detergents they used, how they performed. cleaning and disinfection, and the times taken to carry out each operation. At the end of all the cleaning and disinfection of the line, pH determination procedures, luminescence and microbiological tests were applied, to validate and start with the implementation of the new protocol to be used; the main indication to be able to validate was the absence of Escherichia coli, since there were antecedents in the same line. Another measurable factor was the reduced time compared to the protocol that the company used, the result was a reduction in time of 21.8 percent less time.
