Physicochemical and functional properties of starches extracted from native potatoes from Ilave (Puno, Peru) were determined. The varieti es used were called native potatoes (Imilla Blanca and Imilla Negra) and native bitter potatoes (Lo'cka, Piñaza and Ocucuri Blanca), in order to find new sources of starch for use in industry and encourage their business expansion. Therefore, physico-chemical analyzes were performed to evaluate if they are within quality parameters. Also, values of amylose (23,6-30,0 %) and phosphorus (550,75-827,07 ppm) were analyzed, due to their importance in some functional properties of starches. Retrogradation of potato starches has been determined by measurement of syneresis and clarity. The rheological and thermal properties were investigated by using the hybrid rheometer (DHR3) and multi differential scanning calorimetry (MDSC). Stress and shear rate profiles indicated that starch gels showed non-newtonian behavior and the starch gels flow behavior could be well described by the Herschel-Bulkley’s model (R2>0,97), while the viscoelastic behavior has a predominance of elastic modulu s (G') in all gels. Studies on the phase transitions associated with gelatinization, showed significantly lower values for initial temperature (T o), peak temperature (Tp) and conclusion temperature (Tc) for Ocucuri Blanca starch. All data obtained were statistically analyzed by completely randomized design and mean comparisons using Fisher’s LSD (Least significant difference).
