The objective of this research was to characterize the seeds of 20 ecotypes of tarwi (Lupinus mutabilis) from different Andean areas of Peru. Morphological characteristics and proximate chemical composition were determined for bitter seeds. In bitter and debittered seeds, the total tocopherol and carotenoid content was determined, the electrophoretic profile was determined by SDS-Page electrophoresis, the range of molecular weights was estimated and the antioxidant capacity was quantified by four methods (RP, ABTS, DPPH and FRAP). Protein content (average 41.8 percent) was higher than that of the control samples L. angustifolius (29.16 percent), L. albus (31.02 percent) and L. luteus (39.03 percent); fat content (average 16.17 percent) was also much higher than that of the control samples L. angustifolius (5.15 percent), L. albus (8.41 percent) and L. luteus (14.3 percent). The soluble protein content ranged from 14.1 percent to 33.2 percent in the bitter seeds and from 0.3 percent to 1.6 percent in the unbittered seeds. The electrophoretic profiles of the 20 ecotypes, both in the bitter and unbittered samples were identical, detecting better differentiated bands between approximately 14 and 66 kDa, while in the range of 67-91 kDa no band was detected. The unbittered seeds presented high levels of tocopherols (319.76 mg/kg DM, average), compared to the control samples (103.22 - 260.82 mg/kg DM); whereas, the carotenoid content was lower (1.70 mg/kg DM, average) than in the case of the control samples (1.05 - 7.14 mg/kg DM). The average antioxidant capacity (mmol TE/kg DM) of the 20 tarwi ecotypes (2.65, 40.17, 2.63 and 18.41 with PR, ABTS, DPPH and FRAP methods, respectively), was higher than in the control samples L. albus (1.03, 7.41, 2.69 and 2.30); L. angustifolius (0.89, 9.23, 1.48 and 5.08), L. luteus (4.01, 31.34, 5.54, 12.44). The characterized tarwi (L. mutabilis) showed a higher richness in proteins and bioactive compounds such as tocopherols and antioxidant capacity, thus emerging as an input of choice for the development of plant protein-based foods.
