The main objective of this academic work is to evaluate the technical, economic and financial viability of the implementation of a processing plant for garlic-based intermediate products for hotels, restaurants and caterings at Lima. First, a market study was carried out for which a survey of purchasing decision-makers in hotels, restaurants and caterings in Lima was used, the result of it showed that the type of intermediate product needed is peeled garlic. Then a desk research was carried out to determine the supply and demand of both raw material and finished product, which affirmed the viability of the project and a potential market of 8 369 tons by 2020 from which it was decided to capture a percentage of 4 corresponding to 302 tons. According to the previously mentioned, the size of the project was defined, taking into account also the technology to be used and the investment (and therefore the risk) necessary. The location was defined using the factor ranking method that resulted in the Santa Anita district. Subsequently, for the engineering of the project, a type of intermediate technology was chosen for which the production flow defined by another company was already available. According to it and the production program that results in a production rate of 127 kilograms per year to maximum capacity in the year 2020, the Gantt chart and project requirements were calculated, such as: raw materials and supplies, labor, machinery and equipment, water and electricity. For the design of the plant, the SLP planning system was used and for the rest of the areas an arithmetic method was used. Finally, the investment and financing and also the economic and financial indicators derived from the respective cash flows that revealed the profitability of the Project, were defined
