Resumen: Muchas veces el tiempo de agoste se prolonga sin existir una planificación, ocasionando pérdidas de tiempo y dinero para el cañicultor, por tal motivo se planteó como objetivo general, conocer el efecto del tiempo de agoste en la calidad de la caña de azúcar. El trabajo de suficiencia profesional se desarrolló en cinco campos de cultivo de la empresa Agrotechi SAC, ubicados en el distrito y provincia de Virú, departamento de La Libertad, tomando como muestra cinco variedades de caña de azúcar, CC93, H71, PCG12, CC87 y H32, una variedad para cada campo. Se realizó un análisis de correlación de Pearson y un análisis de varianza con análisis de regresión simple, así como una estimación de los costos de producción y utilidad bruta que variaron al prolongarse el tiempo de agoste. Se tuvo como resultados que el tiempo de agoste acelera la maduración e incrementa los niveles de sacarosa, brix y pureza, y disminuyendo los azúcares reductores en la caña de azúcar, afectando las utilidades de la empresa cañicultora si se prolonga más de lo necesario. Asimismo, existe una relación directamente proporcional entre el tiempo de agoste y la sacarosa, brix y pureza, y una relación inversamente proporcional entre el tiempo de agoste y los azúcares reductores. No se encontró una buena correlación entre las variables, siendo la variedad CC93 la que presenta un mayor coeficiente de correlación para sacarosa, brix y pureza, con 0,92; 0,87 y 0,97 respectivamente y la variedad H71, la que presenta un mayor coeficiente de correlación para azúcares reductores, con -0,86. El tiempo mínimo de agoste para las variedades H71, CC93, PCG12, CC87 y H32 fue de 62; 50; 57; 59 y 55 días, respectivamente, considerando una concentración de sacarosa en caña de 12 por ciento. En las cinco variedades no hay diferencias estadísticas significativas al comparar los parámetros de calidad. Prolongar el tiempo de agoste uno o dos meses más incrementa los costos de producción en cuanto a la mano de obra directa y los costos indirectos de producción, así como, disminuye el margen de utilidad bruta en un estimado de 2,43 por ciento si el agoste se prolonga un mes y 5,61 por ciento si el agoste se prolonga hasta dos meses.
Many times the drought period is prolonged without planning, causing loss of time and money for the cane grower, for this reason the general objective was to know the effect of the aging period on the quality of the sugar cane. The work of professional sufficiency was developed in five fields of the Agrotechi SAC company, located in the district and province of Virú, department of La Libertad, taking as a sample five varieties of sugar cane, CC93, H71, PCG12, CC87 and H32, a variety for each field. A Pearson correlation analysis and an analysis of variance with simple regression analysis were carried out, as well as an estimate of production costs and gross profit that varied as the drought time was prolonged. The results were that the aging time accelerates the maturation and increases the levels of sucrose, brix and purity, and decreases the reducing sugars in the sugar cane, affecting the profits of the sugarcane company if it lasts longer than necessary. Likewise, there is a directly proportional relationship between the drought time and sucrose, brix and purity, and an inversely proportional relationship between the aging time and reducing sugars. A good correlation between the variables was not found, being the variety CC93 the one with the highest correlation coefficient for sucrose, brix and purity, with 0.92; 0.87 and 0.97 respectively and the variety H71, the one with the highest correlation coefficient for reducing sugars, with -0.86. The minimum aging time for varieties H71, CC93, PCG12, CC87 and H32 was 62; fifty; 57; 59 and 55 days, respectively, considering a sugarcane sucrose concentration of 12 percent. In the five varieties there are no statistically significant differences when comparing the quality parameters. Extending the aging time for one or two more months increases production costs in terms of direct labor and indirect production costs, as well as decreases the gross profit margin by an estimated 2.43 percent if the drought lasts a month and 5.61 percent if the drought lasts up to two months.
