The purpose of this study was to obtain sensorially accepted salty humitas with cheese, using Giant Cuzco corn (Zea mayz) of discard, for this purpose the maturity state of corn and the type of mill used were evaluated based on in the level of acceptance of the humitas; in addition, the development of a HACCP plan for the line of salted humitas with cheese was evaluated following the twelve steps methodology. Selected discard corn, without phytosanitary or mechanical damage was used and it was classified in three groups according to its maturity status: milky stage corn, mass stage corn and hard layer corn phase. The three groups underwent two types of grinding: one in a disc mill and another in a colloid mill, obtaining a total of six treatments. In grinding, the highest performance was achieved using corn in the hard layer formation stage and applying the disk mill (T5), obtaining a value of 92,98 percent. On the other hand, it was evidenced that only the state of maturity significantly influenced the particle size of the corn masses obtained in grinding. As for the sensory analysis, it was found that the humita with the best level of acceptability was the one made with corn in the mass stage and processed with a disc mill (T3), which was characterized by determining its pH values (6,82), acidity (0,18 percent), moisture (59,79 percent) and microbiological analysis. With respect to the elaboration of the HACCP plan, the twelve step method recommended by MINSA (2006) was followed, and the cooking stage was identified as a critical control point, since is the last stage in which the pathogenic microorganisms could be eliminated.
