The objective of the present investigation was to purify the peptides of a cañihua protein hydrolyzate, by ultrafiltration and gel filtration chromatography techniques, based on their ABTS+ antioxidant capacity (AAOX) and antihypertensive activity, by measuring the IC50 value, (corresponding to 50 percent inhibition of the angiotensin converting enzyme I), as well as its characterization at the molecular weight level by electrophoresis. The protein hydrolyzate was obtained from a protein concentrate, by a two-step hydrolysis with the enzymes Neutrasa and Alcalasa (0.385 AU/0.385 AU), for a period of 180 minutes. The hydrolyzate showed an AAOX of 1.95 μmol TE/mg protein and an IC50 value of 0.16 mg / mL. After passing, the protein hydrolyzate, by ultrafiltration using the cut off of 10 and 3 kDa, the values of AAOX and IC50 the final permeate (3 kDa) reached AAOX values of 2.11 μmol TE/mg protein and IC50 of 0.09 mg/mL. This permeate was passed through filtration chromatography on Biogel P-2 gel, obtaining a total of 3 fractions, where, the last fraction obtained the highest value of AAOX (3.18 μmol TE/g protein) and the lowest value of IC50 (0.055 mg/mL). After the electrophoretic evaluation, the constituent peptides of this last fraction presented a range of molecular weights between 1.29 to 5.33 kDa, being found in them an antioxidant and antihypertensive potential. Given the results obtained, cañihua stands out as a nutritious and beneficial alternative to health.
