The confectionery products are less likely quality deterioration due to biological agents because have a high content of sugar in their formulation, so the storage stability mainly depends on the physical-chemical changes that directly influences on product sensory quality. This research work proposed the estimation shelf life with a new candy deposited formulation using accelerated and field trials in regions with humid and hot climates such as Piura an Iquitos. The candy depositing prototypes were reformulation with glucose syrup with low content of DE and lactic acid. There were subjects under different storage conditions of 30, 40 y 50°C and 70 percent of humidity on singles storages for each condition. The parameter which was evaluated: humidity and depleted sugars, then with Arrhenius model obtained the shelf life for each prototype and trials proposed. Finally, the optimum formulation was determined with 18 months useful life, keeping physical, sensorial, and microbiological conditions; This fall withing the NTP limits, with results below to 10 ufc/g from begins to storage ends.
