The effect of five plant densities in escabeche pepper (Capsicum baccatum L var. pendulum) on yield and quality was evaluated in Cañete, between january to july 2018. Plant densities under study were 40 cm (20 833 plants/ha), 45 cm (18 518 plants/ha), 50 cm (16 666 plants/ha), 55 cm (15 151 plants/ha), 60 cm (13 888 plants/ha) between plants; the distance between rows was 1.20 m for all densities uisng furrow irrigation. A completely randomized block design with 5 treatments and 4 blocks was used. The following characteristics were evaluated: plant height (cm), days at full flowering (No.), days at maturation (No.), fruit set percentage (%), percentage of dry matter. (%), fruits per plant (No.), fruit diameter (cm), fruit length (cm), fruit weight (g), total yield and production quality. Plant density at 40 cm (20 833 plants / ha) statistically influenced plant height. Using 60 cm between plants (13,888 plants / ha) statistically influenced the percentage of fruit set and number of fruits per plant. The highest yield of fresh fruit (28.6 t / ha) was obtained with the plant density of 40 cm (20 833 plants / ha).
