The native starch has two important properties which are water retention and retrogradation. Water retention has made this native starch to be frequently used in the food industry, its main objective is to reduce costs. However, the retrogradation in some products, where the final consumer is more demanding, has caused the use of modified starches. Being these more expensive than the native ones. The modified starches, are being developed to be applied under more demanding conditions; like temperature, acidity, shearing forces, etc. Moreover, many companies which produce this kind of starch, make development modifications adjusting them to the needs of the client. In the dairy industry, the modified starches are used specially in the elaboration of yogurt because the final product goes through several processes such as agitation and heat treatment; through this process the quality of the product starts to deteriorate, being syneresis the main problem. Nevertheless, in the elaboration of blancmanges “manjar blanco,” the native starch is more commonly used depending of the kind of product; however, when used in large quantities, this could also present a syneresis problem and it is because of the starch retrogradation. This is the reason why many companies-producers use both types of starches. Finally, the native starch is more commonly used in the meat industry due to its linking and water retention properties. It is true that at the beginning not expensive ingredients were considered but the new technology has developed additivies like modified starches which are considered funtional additivies.
