Certificación GLOBAL G.A.P. para el aseguramiento de la inocuidad de las agroexportaciones de frutas y hortalizas

Abstract

Una de las principales exigencias de los mercados internacionales para las agroexportaciones es el desarrollo de las Buenas Prácticas Agrícolas que consiste principalmente en garantizar la inocuidad y calidad del producto final a través de la estandarización de los procesos de producción; para ello la norma de aseguramiento integrado de fincas (IFA) de GLOBAL G.A.P., establece estándares de calidad para acceder a dichos mercados. Los diferentes miembros del sector agrario, ya sea cooperativas, asociaciones y productores individuales, no tienen estandarizado los procesos de producción de sus predios, lo cual dificulta acceder a estos mercados. La certificación GLOBAL G.A.P., se viene desarrollando a través de los distintos organismos de certificación (OC), los cuales exigen y verifican el cumplimiento de los principios de control y criterio de cumplimiento (PCCC) establecidos en el standard de GLOBAL G.A.P. Estos PCCC consisten en verificar desde la inspección del sitio, instalación del cultivo, infraestructura del predio, análisis de riesgos, procedimientos, instructivos, registros de las actividades realizadas como el registro de aplicaciones de fertilizantes y productos fitosanitarios, cualificaciones del personal clave, capacitaciones de las actividades realizadas, análisis de agua, análisis multiresiduo del producto, higiene en cosecha, cosecha y transporte del producto y manipulación y empacado del producto. El cumplimiento de estos requisitos está relacionado con aspectos de sostenibilidad y medio ambiente, la seguridad del trabajador, y la inocuidad alimentaria que son las bases de las buenas prácticas agrícolas, garantizando así la obtención de la certificación GLOBAL G.A.P. La verificación de estos procesos permitió establecer si las empresas agroexportadoras cumplen con los requisitos para la obtención de la certificación y de esta manera garantizar que la cadena productiva sea sostenible.

One of the main requirements of international markets for agroexports is the development of Good Agricultural Practices, which mainly consists of guaranteeing the safety and quality of the final product through the standardization of production processes; to this end, the GLOBAL G.A.P. integrated farm assurance (IFA) standard establishes quality standards for accessing these markets. The different members of the agricultural sector, whether cooperatives, associations or individual producers, do not have standardized production processes on their farms, which makes it difficult to access these markets. The GLOBAL G.A.P. certification, certification is being developed through different certification bodies (CB), which require and verify compliance with the principles of control and compliance criteria (PCCC) established in the GLOBAL G.A.P. standard. These SCCP consist of verifying site inspection, crop installation, farm infrastructure, risk analysis, procedures, instructions, records of activities carried out such as the record of fertilizer and phytosanitary product applications, qualifications of key personnel, training on activities carried out, water analysis, multiresidue analysis of the product, hygiene in harvesting, harvesting and transportation of the product, and handling and packaging of the product. Compliance with these requirements is related to aspects of sustainability and the environment, worker safety and food safety, which are the bases of good agricultural practices, thus ensuring that GLOBALGAP certification is obtained. Verification of these processes made it possible to establish whether the agroexport companies comply with the requirements for obtaining certification and thus ensure that the production chain is sustainable.
