The present study describes a type of management and processing of fresh organic ginger for the export market in the district of Pichanaqui in Junín. Due to the COVID-19 pandemic, global ginger consumption increased significantly due to its medicinal properties, leading Peru to become the fourth-largest exporter of fresh organic ginger. The United States, the European Union, and Canada markets demand that organic products meet their organic production standards, good agricultural practices (GLOBAL GAP), and social responsibility practices (GRASP, SMETA). This monograph outlines the professional experience developed over the years in the post-harvest management of fresh organic ginger as the head of operations within the company. A new ginger processing method was developed and implemented, with a revised process flow (reception, primary washing, secondary washing, drying, sorting and packaging, storage, and transportation), resulting in improved product outcomes upon arrival at the destination.
