In this research, Response Surface Methodology (RSM) was applied to maximize the performance when using enzyme treatment prior to passion fruit (Passiflora edulis) seed oil extraction with hydraulic press, which contain 26,36% (d.b.) oil (ether extract). Likewise, the effect of this treatment on the quality characteristics of obtained oils was assessed. Evaluated factors belong to the enzyme treatment as unit operation and these were: enzyme type (cellulase, hemicellulase and an enzyme complex with hemicellulolytic and cellulolytic activity), enzyme concentration (0,5 and 2% resp. substrate), ratio MP: water (3: 1 and 5: 1) and hydrolysis time (4 to 18 hours). Optimized levels were: enzyme concentration = 1,95%, Relationship MP: water = 5,68: 1 and Time hydrolysis = 22,8 hours; with which was possible to reach an experimental performance of 20,19 ± 0,40% (w/w) (d.b.), compared with the performance obtained with a conventional extraction (without application of enzymes) of 11,87% (w/w) (d.b.). And for the effect of enzymatic treatment on oil quality; moisture and volatiles compounds, photometric color, refractive, acid and p-anisidine index are significantly affected when enzymatic treatment were compared to conventional extraction; also the specific gravity, refractive index, peroxide index, iodine index and fatty acid composition are not significantly affected. Therefore, the application of this technology is feasible and could be profitable for passion fruit volumes handled at national level.
