The objective of the present research was to evaluate the influence of vacuum packaging on the fillets of anchoveta ((Engraulis ringens) type anchovies stored under refrigeration and ambient (20°C) conditions for 4 months. For this purpose, was employed salted anchoveta with a ripening time of 2 months, proceeded to the filleting and packaging, stored at temperatures of 8°C and 20°C, periodic evaluations were performed every 15 to 30 days. The physico-chemical variables evaluated were the production of total nitrogen volatile bases (TVB-N) and nitrogen trimethylamine (N-TMA). The ratio of proteolysis index the degree of hydrolysis and changes in the lipid fraction through the test of 2- thiobarbituric acid (TBA) and index of ester. The results showed significant differences (p <0.05) on the first four variables mentioned, there weren’t appreciable differences in the lipid fraction during storage. The most outstanding results for the different temperature conditions were TVB-N values ranging from 26.91 and 75.74 TVB-N mg/ 100g; as well as the ratio of proteolysis, values ranged from 6.10 to 13.20. With respect to the sensory evaluation, differences were presented in the samples stored under ambient conditions, these remained sensorially acceptable until week 18 of sampling, was rejected by the panel of tasting in the week 22 qualified as a sobrematurating product according to the sensory table, on the other hand, the filetes in refrigeration presented a behavior similar to the traditional maturation, however not presented the bouquet characteristic of the product. By the results, it can be indicated that the most favorable condition is to preserve the fillets of anchovies in refrigeration to guarantee the stability of the product.
