Yacón, Smallanthus sonchifolius, is a root native to the Andes, which has been cultivated since pre-Hispanic times, between 1,000 and 4,000 meters above sea level. The root contains a high concentration of fructooligosaccharides (FOS), inulin, antioxidants and phenolic compounds, in commercial presentations such as: root, flour and syrup; providing beneficial health effects due to its antiglycemic, anticancer and antioxidant activity, in response to adequate consumption of its bioactive compounds within the established life time. Internal chemical reactions modify the molecular structures of compounds. The present study analyzed the kinetics of nystose and kestose type FOS among other metabolites of yacon syrups from the departments of Amazonas and Huánuco, through accelerated tests carried out at temperatures of 45, 65 and 85 °C for one week. HPLC-RID was used, with mobile phase conditions acetonitrile:water (70:30 v/v), 5 μm column, flow rate of 1 mL/min and column temperature 35 °C. Obtaining changes in concentrations, the longest exposure time was recorded on the 4th and 5th day with kestose and nystose concentrations of 9.555 g/100g and 8.372 g/100g of Huánuco syrup; 6,799 g/100g and 5,424 g/100g for Amazonas syrup respectively. Likewise, to determine the compounds existing in the syrups, these were identified through the chemical profile by LC-MS analysis, at mobile phase conditions of water with 0.1% formic acid in water (A) and 0.1% of formic acid in acetonitrile (B), the gradient used consists: (0-1) min 10% B; (19-21) min 100% B; (21.1-24) min 10% B; C18 column and flow rate of 0.25 mL min-1, maintained at 40°C with an injection volume of 3 μL. Different types of FOS were identified, organic acids such as citric, malic, ascorbic, quinic acid, phenolic compounds derived from caffeic acid, amino acids and a rare compound identified as phytuberin. The following quality indicators were determined: FOS, reducing sugars and antioxidant capacity. The quality indicators FOS and simple sugars fit better to the first order reaction models, while the antioxidant capacity fits to the zero order. Finally, the predictive shelf life of yacon syrup is 7 days with 75% conservation of the active compounds. This ensures adequate intake of metabolites by consumers.
