It has been observed in Peru a renewed interest in the consumption of dairy products such as yogurt, which is why it is necessary to prolong the shelf life of this product while maintaining its stability over time. For this purpose, the main objective of the following research was to elaborate a yogurt with water activity (aw) stabilized by the addition of adequate concentrations of sugar and carrageenan; In addition, evaluate the other physicochemical properties of the finished product (pH, water retention capacity and syneresis) throughout the storage time. The water activity (aw) of the yogurt remained constant throughout the storage time (15 days) showing that carrageenan acted stabilizing the union of the water to the constituents of the milk (proteins). The pH value increased as the concentration of sucrose and carrageenan increased, obtaining maximum values for concentrations of 10.0 and 1.0 percent, respectively; however, the pH decreased throughout the storage time, due to the production of lactic acid. The water retention capacity (CRA) increased as the concentration of sucrose and carrageenan increased, obtaining maximum values for concentrations of 10.0 and 1.0 percent, respectively; in addition, CRA increased throughout the storage time, due to the hydrophilic capacity of sucrose and carrageenan. Finally, the syneresis of the yogurt increased to a carrageenan concentration of 0.5 percent, however it decreased to a concentration of 1.0 percent; in addition, the syneresis increased throughout the storage time (15 days)
