The doctoral thesis “Evolution of glucosinolates, phenolic compounds and β-sitosterol in three ecotypes of maca (Lepidium meyenii walp.) during pre-harvest and post-harvest“ was carried out at the Industrial Biotechnology Laboratory of the Institute of Biotechnology (IBT) of Universidad Nacional Agraria La Molina, it consists of five chapters. Chapter one, general overview, describes the importance of maca as a nutritious and functional food, biosynthetic and degradative metabolic pathways of glucosinolates, phenolic compounds and β-sitosterol; chapter two, evolution of glucosinolate content and myrosinase activity in three ecotypes of maca (Lepidium meyenii Walp.) during preharvest, harvest and post-harvest drying; chapter three, evolution of the phenolic compound content and antioxidant capacity in three ecotypes of maca (Lepidium meyenii Walp.) during pre-harvest, harvest and post-harvest drying; chapter four, evolution of βsitosterol content in three ecotypes of maca (Lepidium meyenii Walp.) during pre-harvest, harvest and post-harvest drying. Finally, in chapter five, the conclusions and general recommendations that resulted from this research. This study aimed to determine the effect of pre-harvest, harvest and post-harvest drying on the profile, glucosinolate content and myrosinase activity; on the profile, content of phenolic compounds and antioxidant capacity; and on β-sitosterol content in the hypocotyls of three ecotypes of maca. Six glucosinolates and eleven phenolic compounds HPLC-DAD were identified in the three ecotypes, from which benzyl glucosinolate was the most abundant representing 80% of total glucosinolates and flavanol derivates (flavan-3-ol) representing 84% of total phenolic compounds. During pre-harvest, glucosinolates were significantly increased, biosynthesis occurred up to 15 days post-harvest drying, phenolic compounds showed a variable behavior probably due to the complexity of their metabolic pathways of biosynthesis and degradation and an increase in β-sitosterol content at different times between pre-harvest and harvest was observed. During harvest, no differences were observed in their contents of glucosinolates and β-sitosterol in the three ecotypes, the phenolic compounds HPLCDAD in the red and black maca were superior to that of the yellow maca; the red ecotype presented higher content of total phenolic compounds and antioxidant ABTS ●+ capacity than the yellow and black ecotypes. During post-harvest drying, under traditional conditions, a significant decrease of glucosinolates between 20% and 50%, phenolic compounds between 66% and 90% and of β-sitosterol between 46% and 64% was observed, which was attributed to cell breakdown by freezing and thawing temperature fluctuations during the drying process. Therefore, traditional drying conditions should be reviewed
