The objective of the present investigation was to obtain an extruded snack based on raw corn polenta enriched with precooked Jumbo FlyindSquid (Dosidicus gigas) flour and other raw materials, in order that it meets the amino acid requirements for children from 10 to 12 years as reported by WHO / FAO 1973. Four theoretical formulations were initially evaluated, which were extruded according to the following process flow: receipt of the raw material, weighing and mixing, conditioning of the mixture, extrusion process, cooling, packaging in bulk, final packaging in bioriented polypropylene bag, sealed and stored. The final optimal formulation was 4% HPP, 18.5% Rice, 60% Polenta raw corn, 15% Flour Kiwicha and 2.5% Milk powder. Also, the parameters suitable for the production process of the extruded snack were: moisture of the mixture of 12.6% and screw speed of the 150RPM extruder. Physically it has an expansion index of 3.3 and an apparent density of 66.76 g / l, in addition to having a round shape with an average diameter of 1.3cm, cream color and absence of smell and flavor to the squid resource. The chemical composition was 16.8% protein, 5.35% moisture, 1.89% fat, 1.05% fiber, 2.01% ash and 61.31% carbohydrate; in addition to presenting conforming values regarding the microbiological evaluations required by RM No. 451-2006 / MINSA. Finally, since the extruded snack was characterized physically, chemically and microbiologically, the shelf life of the snack was determined using accelerated methods of chemical kinetics of quality deterioration, defining a zero order reaction and resulting in 15 weeks.
