In the present study, red quinoa flour was obtained by solid-state fermentation supplemented with sodium chloride and monosodium glutamate by Monascus purpureus in three stages. In the first stage, the best fermentation time was determined by evaluating the effects of NaCl at levels of 0.05, 0.1, 0.2 and 0.4% and MSG at 1% during days 0, 2, 4, 6, 8, 10, 12 and 14 according to the colour parameters L*, a*, b*, C* and hº. In the second stage, a Box- Behnken Design with response surface for MSG (0.5, 1.0 and 1.5%), NaCl (0.05, 0.10 and 0.15%) and pH (5, 6 and 7) at the best fermentation time was carried out to obtain the best red quinoa flour by fermentation, optimising the values of L*, a*, b*, b*, C* and hº. In the last stage, the techno-functional properties of the fermented quinoa flour were evaluated. The results showed that the best time to carry out solid-state fermentation of quinoa grains by M. purpureus is at day 8. The best flour according to the optimal parameters of L*, a*, b*, C* and hº was the red quinoa flour obtained with the optimal levels of MSG (1.33%), NaCl (0.1%) and pH (6.38). With respect to the techno-functional properties, it showed good water absorption capacity, oil absorption capacity, emulsifying activity and emulsion stability, as well as good nutritional value. Therefore, this new substrate produced by fermentation of M. purpureus together with supplements such as monosodium glutamate and sodium chloride promoted the synthesis of mainly red pigments thus giving a red colouring to the final substrate that promises to give good results if incorporated in food products.
