The 5S methodology takes its name from the five Japanese words that begin with the letter S: Seiri (Classification), Seiton (Order), Seiso (Clean), Seiketsu (Standardization) and Shitsuke (Discipline), which give the guidelines to implement and maintain a system of Quality Management within the organization, achieving results in the short term, from which can lay the foundations to improve conditions of quality, safety and work environment. The objective of the present study was to determinate the current situation of PROLAC SAC, with respect to these five principles, through the collection of information through surveys, evaluations and photographic records, to analyze them and prioritize problems to reduce and eliminate. In addition, a 5S Implementation Manual was prepared as part of the company's continuous improvement process (Kaizen). The results of the evaluations indicated that the areas of heat treatment/bagging and cheese processing are the ones that least satisfy the principles of 5S with 52 and 50 percent, while the area of reception of raw material obtained the highest rating with 73 percent. As a general result, the company obtained 62 percent compliance with the principles. It was determined that the Order had the lowest rating with 58,5 percent, while Cleanliness was the principle with the best rating in the evaluations, with 75,6 percent. From Pareto analysis it was concluded that Order and Standardization are the principles with greater variability, which must be prioritized during the implementation of the 5S program. Finally, the SWOT analysis allowed us to know the internal and external factors that affect the fulfillment of the principles of the 5S and to be able to face them during its implementation.
