From purple sweet potato, an extract rich in anthocyanins is obtained. This is done by following a process with the these unit operations: washing, milling, resting (with the addition of pectinases), pressing, heating, sedimentation, micro filtration, pre-concentration, sedimentation, filtration and final concentration. Throughout this process, there are losses that result in low performance. One of the losses that are under study, is the sediment that forms after pre-concentration. It is a very viscous sediment and concentrated in color with which it is not possible to work more. This is why the sedimentation and a second concentration stage takes place, in order to eliminate this sediment before finishing the concentration and prevent its formation inside the evaporator. To date, the pertinent analyzes are being carried out to discover the root cause of this problem.
