The present study aimed to evaluate the effect of food restriction on production indices: weight, weight gain, consumption, feed conversion, and mortality and incidence of ascites in Broiler Ross 308 AP chickens. The method involved the use of 8,000 chickens divided into 2 groups (control and food-restricted). The results showed no differences in weight between the test and control groups. Regarding food consumption and feed conversion evaluation, a higher level was evident with the control diet, suggesting that food restriction is more effective in terms of feed conversion. In the case of mortality, a greater difference was observed from the fifth week with a final rate of 1.10% in the restricted group and 1.44% in the control group. The results suggest that food restriction impacts productive performance, showing lower weight gain and consumption but contributing to the reduction of ascites-related mortality. This indicates that food restriction could be an effective strategy to address challenges in poultry production in Arequipa, improving economic efficiency and bird health under high altitude conditions.
