This monographic document is based on my work experience as an auditor in accredited certification organizations that are dedicated to evaluate compliance with standards in the agricultural sector, which employs more than 4 million people nationwide. At first, non traditional export agriculture focused on achieving organoleptic quality standards. However, greater interest is being shown in compliance with good agricultural practices and food safety, generating new requirements that guarantee fruits and vegetables safety, such as the GLOBALG.A.P. This research describes and analyzes in detail the process of implementation and certification of this standard in the main agro-export crops, identifying key points, explaining the legal framework that surrounds them, presenting specific audit criteria and exposing the importance of quality management systems in order to achieve compliance. It has been concluded that the commitment of the organizations' management is important in the allocation of required resources, that knowledge of the standard and information related to food safety, occupational safety and environmental management, and its legal context, must be achieved. It has also been determined that the GLOBALG.A.P. audit process is standardized and proposes a logical sequence from the preparation of risk analysis to the registration of activities. Finally, it is established that the implementation of this standard is an essential requirement to be able to reach new international markets, because it helps the control and continuous improvement of its processes, facilitates legal and regulatory compliance, and ensures its clients a safe and quality product. Therefore, it should be highlighted in the professional training of students at universities in the sector.
