The objective of this study was to estimate the effect of refrigerated storage (7 ° C and 85% RH) for periods of 10, 20 and 30 days with their respective ripening on the shelf (~ 20 ° C and 75-80% HR) on the characteristics physicochemical, oxidative state (thiobarbituric acid reactive substances, TBARS), lipophilic antioxidants compounds: tocopherols and carotenoids, the content of phytosterols, lipophilic antioxidant capacity and their relationship with the appearance of dark spots at the pulp level in avocado cv. Hass. The physicochemical characteristics were evaluated prior to storage, where the dry matter and oil content were 25.67 and 14.49 percent, respectively. The respiration rate showed a typical climacteric behavior, reaching a maximum value after 20 days of cold storage; weight loss increased during the shelf ripening process after cold storage, while oil and dry matter content did not show significant differences. The cold storage time for 20 and 30 days influenced the quality of the fruit, presenting a higher incidence and severity of pulp browning. The extent of lipid peroxidation indicated by the TBARS values increased with increasing cold storage duration and shelf storage conditions, showing a high and positive correlation with the percentage of pulp browning. Under the refrigeration conditions and subsequent edible ripeness of the avocados, low correlations were found between the content of lipophilic antioxidants (carotenoid and tocopherol), the content of phytosterols and the lipophilic antioxidant capacity, with respect to cold damage and to the content of TBARS.
