In this investigation, the waste generated by the pisquera industry was utilized, called: “borra, head, tail, pomace and vinaza”. Through the aguardiente production by column distillation, a 500 still turbo distiller with a stainless steel column condenser, and a 500 still turbo with a T500 copper column condenser were used. A complete block design was applied randomly to evaluate the influence of cooper on the chemical composition of the aguardiente. It was produced 100 liters of liquor to 40 percent v/v from 372,68 “borra”; from 68,77 kilograms of “head”; from 409 kilograms of “tail” and from the mixture of 31,70 kilograms of “pomace” + 633,38 kilograms of “vinaza” + 7,37 kilograms of “head”. Likewise the concentration of 23 volatile compounds was determined by gas chromatography with flame ionization detector (GC-FID), whose concentration in the four spirits are as allowed by regulation N° 110/2008 of the European parliament. The production of 100 liters of “head” aguardiente at 40 percent v/v had a cost of S/. 497,14 Nuevos Soles, being the one with the lowest cost and profitable, considering S/. 10,00 Nuevos Soles the sales price per bottle of aguardiente of 750 mL at 40 percent v/v comparing with “pomace”+ “vinaza”+ “head” at 40 percent v/v which had a production cost of S/. 1 603,54 Nuevos Soles; and the 49.6 percent of the volume of the “head” used has been reduced, as the 9,7 percent of the “borra”, 8,8 percent of the “tail” and 3,9 percent of the “vinaza”.
