This research work has shown how feasible is to increase the Borgoñas grape oil yield seed extraction in a hydraulic press using enzymes, at laboratory level, resulting in a product of acceptable physical-chemistry quality. The study was divided into two parts: (a) determining parameters for optimal performance in the extraction of oil from grape seed by hydraulic pressing using enzymes (b) evaluation of the quality of the extracted oil, and determination of the parameters for optimal performance and quality. The crude grape oil without enzyme treatment (control) was obtained by mechanical extraction, the procedure was weighed, milling, screening, heat treatment 80 °C, for 20 min, pressed at a constant pressure of 6 000 psi with a moisture content of 12,5 percent, and centrifuged at 448 g respectively. After the above described, in the extraction with enzymatic treatment process, the following factors were used: enzyme complex Deltazym VRAC - 100, pure enzymes cellulase from Aspergillus niger and hemicellulose Aspergillus niger enzyme concentration (0,5% and 2%), raw material: water (2: 1, 3: 1), 0,5 mm particle size and incubation time 4 and 18 hours. A factorial design was used 3 x 23 analyzing the results with DCA and multiple comparisons with Least Significant Difference (LSD). The oil yield grape was optimal (9,03 ± 0,61% g of oil extracted / 100 g sample) and obtained the best quality characteristics (peroxide value and acidity) in dealing with the cellulase enzyme factors extraction mp: water (2:1), 0,5 percent enzyme concentration, and 18 hours.
