The main goal of this research was to measure the influence of spray drying on the antioxidant capacity and polyphenols content of cocoa pulp, setting the drying parameters: concentration of maltodextrin as carrier agent and inlet air temperature in the spray dryer, andassessing the effect on its physicochemical properties. The cocoa pulp was filtered using tocuyo mesh, refined in a filter press, mixed with maltodextrin, homogenized, spray dried and packaged in trilaminate pounchs. The results showed that 11 percent of maltodextrin and 140 ºC was the optimal treatment because the powder achieved 45.9 percent of yield, 6.22 percent of moisture, 4.89 of E (total change of color), 47.2 percent of polyphenols retention, 51.0 percent of vitamin C retention, 66.2 of antioxidant capacity retention and physical properties such as high bulk density (0.60 g/cm3), high solubility (93.09 percent), low hygroscopicity (25.13 percent), low rehydration capacity (23.86 percent) and low water activity (0.25) were obtained.
