Rice is one of the most produced crops in Perú. To satisfy the domestic demand, it’s being promoted new varieties’ develop y aplication of better cultivation practices, as the add of fertilization nitrogen. To introduce the grain in the market is needed also that the grain shows quality features exptected by the consumer. The main of this research was to evaluate the fertilization nitrogen effect upon the properties related to cooking quality of four enhaced rice varieties (Oryza sativa L.) developed in the Universidad Nacional Agraria La Molina. It studied five rice varieties developed by the “Centro de Investigación en Cereales y Granos Andinos” belongig “Universidad Nacional Agraria La Molina” (PALM 52-53-4-2, PALM 25-42-3-4, PALM 25-59-6-1, PALM 11-41-3-2 y la variedad comercial “La Puntilla”) cultivated in four nitrogen levels: 0, 120, 240, and 360 kg/Ha. It determined the physical features of grain (length, width, ratio length/width, a thousand grains weight, and chalky grains proportion), grain yield and whole grain yield, amylose content, protein content, wáter absorption capacity, solubility, swelling power of rice flour, thermal properties by Differential Scanning Calorimeter and Pasting Profile properties. It found with nitrogel level increases there were a improvement in grain physical features, with higher length, less chalky grains proportion, higher grain yield and whole grain yield, higher amylosa and protein content, higher solubility and less water absorption capacity, less enthalpy gelatinization, higher Setback and less peak viscosity and breakdown in the Pasting Profile. This suggests when nitrogen level increses it’s posible to achieve harder and firmer grains and less stick
