The work was carried out in the pilot plant of fruits and vegetables of the institute of agroindustrial development of the Universidad Nacional Agraria La Molina, in the line of nectars. The collection of information was carried out by means of interviews with the personnel, review of documentation that they presented and by means of filling a checklist. With the information collected, we proceeded to use quality tools such as brainstorming, affinity diagrams, problem selection matrix and diagram causes effect, obtaining as main problem “Poor quality assurance“ that affected the line of nectars, A manual of good manufacturing practices was prepared for this line. The statistical control of processes for the packaging of passion fruit nectar was carried out in two stages, the first with regard to weight and the second one because of the innocuity. For weight control, in situ data were taken from the weights of 40 empty bottles and 10 density measurements of the passion fruit nectar, to determine the appropriate volume through the weight, given that the volume of the specification is 475 ml ± 5 ml equivalent to 718,67 g ± 5,25 g; to carry out the statistical control was confirmed the weight follows a normal distribution and later the control graphs were made to show that the process is under statistical control with respect to the packaging weight. Statistical control of the safety was performed by measuring the packaging temperature to know the minimum temperature in which no microbiological risk is present and a vacuum has been generated in the packaging. It was verified that the temperature followed a normal distribution, that at temperatures above 80 °C vacuum is generated and in addition there is no growth of aerobic mesophilic microorganisms.
