The objective of this research was to correlate the fermentation index of cocoa beans (Theobroma cacao L.) CCN 51 with the electrical conductivity of the leached liquid. Cacao beans fermented and dried were collected from five producing areas Aucayacu, Tingo María, Tocache, Ucayali and Uchiza. For this purpose, 20 cocoa beans were immersed in 400 mL of deionized water at 25 °C for 24 hours. The moisture, ash, fat, protein, crude fiber, total carbohydrates, dimensions, calcium, phosphorus, magnesium, potassium, iron, and cadmium content were determined of the five samples. The fermentation index of the beans was evaluated by cutting test (%) and electrical conductivity (μS/cm/g) of the leached liquid. Potassium was found in a range of 81 to 85 percent of total leached minerals. From all the samples evaluated, those from Uchiza - San Martín had a good fermentation index (86.67 %), so it was selected to continue the investigation. It was found a direct correlation between the fermentation time with the fermentation index determined by the cutting test (p ≤ 0.05; r = 0.99) and the electrical conductivity of the leached liquid of cocoa beans (p ≤ 0.05; r = 0.97). Also, it was found a direct correlation between the fermentation index determined by the cutting test with the of electrical conductivity of the leached liquid of cocoa beans (p ≤ 0.05; r = 0.91).
