Objective: to determine the in vitro antibacterial activity of the ethanolic extract of Allium sativum L. (garlic) peel against Staphylococcus aureus ATCC 25923 and Escherichia coli ATCC 25922 strains. Materials and methods: a quantitative and experimental study was carried out using a population of 20 kg of Allium sativum L. (garlic) bulbs, from which a sample of 2 kg of Allium sativum L. (garlic) peel was extracted. In parallel, 10 Petri dishes inoculated with S. aureus and E. coli, respectively, were prepared. The study employed the phytochemical march technique, agar diffusion in wells, with sets of 25%, 50%, 75% and 90% garlic extract, compared with Ciprofloxacin 5ug as control. Results: the presence of phenolic compounds, alkaloids, α-lactones, β-unsaturated lactones, tannins, reducing sugars and flavonoids were identified. The averages in all concentrations of the ethanolic extract of Allium sativum L. (garlic) peel were lower than ciprofloxacin 5ug (35.7260 and 29.9640 mm), and significant differences were identified by ANOVA analysis (p<0.05). Conclusion: the ethanolic extract of Allium sativum L. (garlic) peel showed in vitro antibacterial activity against Staphylococcus aureus and Escherichia coli.
