Objective: determine the in vitro antifungal effect of the ethanolic extract of the epicarp of Citrus paradisi (Grapefruit) against strains of Candida albicans ATCC 10231. Materials and methods: quantitative, experimental; population: 20 Kg of Citrus paradisi; 5 kg sample of Citrus paradisi epicarp; On the other hand, 10 Petri plates inoculated with Candida albicans ATCC 10231 were used. In addition, the phytochemical march was used, diffusion in agar in wells, consisting of groups at 30%, 50% and 90% against Fluconazole. Results: the average diameters at concentrations of 30%, 50% and 90% of the ethanolic extract of grapefruit epicarp against Candida albicans were lower than those recorded by Fluconazole. The ANOVA test showed (p<0.05) compared to the control set. Additionally, the presence of anthraquinones, phenolic compounds, α, β-unsaturated lactones, tannins, anthocyanins, reducing sugars, flavonoids and alkaloids was identified. Conclusion: the ethanolic extract of the epicarp of Citrus paradisi (grapefruit) presented 50% and 90% antifungal effect against Candida albicans ATCC 10231.
