The purpose of this study is to demonstrate the feasibility of the installation of a noodle production plant based on cañihua flour. The most relevant results will be explained in a summary below. These resumes show that the project is economically, technically, socially and environmentally viable. The market that is sought as a supplier are those people who consume noodles who reside in Metropolitan Lima, who belong to socioeconomic levels A and B and who have a routine or are interested in a healthy lifestyle. Regarding the location of the plant, chapter III explains the points taken into account to identify the ideal place for the implementation of the industry. We examine the macro and microeconomic factors that gave rise to us in the department of Puno. In the next chapter, the size of the plant is evaluated, taking into account the 4 main components: market, productive resources, technology and equilibrium point. In Chapter VI the elements related to the project engineering are analyzed. This point is one of the most complete in the document because the analysis of the project machinery will be carried out, choosing quality tools to ensure production. Likewise, the production process, its characteristics and materials involved will be detailed. In addition, the regulated quality standards, the occupational health and safety milestones will be established according to the Peruvian regulations. Finally, the distribution and logistics chain of the finished product to the sales establishments is described. Finally, the project was financially evaluated, from which positive results were obtained with a NPV of S/ 6.7138.252 and an IRR of 59% with an initial investment of S/ 2.689.217 that will be recovered in 1.82 months with a cost benefit ratio of 5.57 to be recorded in the second year.
