The present research work aims to determine the viability of the installation of a processing plant for trout nuggets breaded in quinoa and oatmeal flour, whose target market is the city of Metropolitan Lima. For this project, rainbow trout will be used as raw material to manufacture the product, which, in recent years, has been growing, since regions such as Junín or Puno are taking advantage of it for the economic and social development of the region. region. On the other hand, it is an important source of food, since it provides certain nutrients to the human being, in addition to this it is a low-fat fish. Subsequently, a market study was carried out through a primary source of information that is the survey, to indicate and justify the analysis of the subject, with the data obtained the objective demand that the project will have in the period of five years. To determine the optimal location of the plant both at the macro and micro location level, the Factor Ranking Method was used, which is based on the quantitative and qualitative analysis of the various factors that must be taken into account at the time of locate a plant, in addition to this the purpose is to reduce fixed costs and increase the level of service to the customer. In addition, the optimal plant size was established based on various factors to take into account, the silver disposal was also defined, as well as the necessary requirements for the optimal operation of the establishment. Finally, the economic and financial aspects of the project were analyzed to determine if it is viable and profitable throughout the period, for this, indicators such as NPV, IRR, B / C and recovery period were measured, in addition, the Social evaluation of the project in order to determine the impact and influence generated towards the communities established in Huancayo through social indicator.
