This research aims to demonstrate the technical, economic, and social feasibility of the implementation of a production plant that will seek to introduce to the market a coffee yogurt whose main differentiator is its fortification with omega 3 in the form of microcapsules, obtained from sacha inchi oil, which helps to prevent chronic non communicable diseases, product of the unhealthy and low in nutrients diet present in young people and adults. First, the demand for the project was defined, which was 1 816 373 kg and included residents of Metropolitan Lima of NSE A and B between 13 and 55 years of age as the target public. Then, macro and micro location factors were identified, which were evaluated by the factor ranking method, determining Lurin as the best alternative. Afterwards, the production process and existing technologies were described, placing the technical specifications of each machine involved in the process. This, together with the material balance, made it possible to define the number of workers and machines required to subsequently determine the inventories and establish the dimensions of the plant using the Guerchet method. Finally, the economic and financial feasibility of the project was established based on a total investment of S/1 267 799,48 distributed 65% in own capital and the remaining percentage with a constant installment loan with BCP at an APR of 12,70%. These data, in addition to the demand, unit price and costs, allowed to obtain an economic NPV of S/510 852,91, an IRR of 35,19% and a benefit/cost ratio of 1,40; on the other hand, at the financial level we obtained an NPV of S/589 522,80, an IRR of 43,62% and a benefit/cost ratio of 1,72. These values exceed the minimum allowed, which concludes that the research is viable.
