In the following work a new dairy product will be presented that aims to serve a Lima population that has or seeks to have a healthy lifestyle, as well as those who cannot ingest high amounts of sugar for their health, among others. It will be a healthy alternative for breakfast, snack or snack, a practical food to carry and consume. First, the problem of the current situation was analyzed, in which it was evidenced that more than 50% of the Peruvian population suffers from obesity and that most of it is concentrated in Metropolitan Lima. In addition, 87% of Peruvian households order healthy products, especially low in sugars. Secondly, the market study was carried out, in which it was concluded that the main competition would come to be companies such as Tigo and Danlac because of the similar characteristics with our product, in terms of thickness and consistency. Also, after applying the segmentation and the results of the survey, it was determined that the demand for the project would be 40 522 yogurt trays (24 cups of 200g each). Third, based on various location factors, the Villa El Salvador district, located in the department of Lima, was chosen as the most optimal place to build the plant. Fourth, the production process was described and based on the capabilities of the machines it was found that 46 053 trays per year would be the bottleneck caused by the fermentation stage. Fifth, according to the demand and the requirements of the inputs and materials and inventories found, the plant was sized and the revenues, costs and expenses of the company were calculated. Finally, an economic, financial and social evaluation of the project was carried out, where they obtained favorable indicators, such as an economic IRR of 19,8% and a financial IRR of 23,3%, as well as a positive NPV and a product-capital ratio greater than one, evidencing that the project is profitable.
